Caramel Creme Brulee Zucchini Bread

Here's a variation on the well-known theme that will add some elegant flavor-interest to zucchini bread. This is great toasted.

Ingredients
  

  • 3 Eggs
  • 2 Cups Sugar
  • 1 Cup Vegetable Oil
  • 1 Teaspoon Flavor Essence French Vanilla Creme
  • 1 Teaspoon Flavor Essence Caramel Creme Brulee
  • 2 Cups Sifted Flour
  • 1 Teaspoon Salt
  • 1/4 Teaspoon Baking Powder
  • 1/4 Teaspoon Baking Soda
  • 2 Cups Grated Zucchini (not peeled)
  • 1 Cup Chopped Nuts

Method
 

  1. In a large bowl, beat eggs until light and frothy. --Add sugar, oil, Flavor Essence --Mix thoroughly
  2. Combine the flour, salt, baking powder and baking soda --and add to the egg mixture --Mix until smooth --Add the shredded zucchini and stir--
  3. Pour and spoon the mixture into 2 greased and floured loaf pans
  4. Pre-heat oven to 350 degrees and bake for about 1 hour --Let cool

Notes

We've also baked other loaves and have substituted Banana Foster for the Caramel Creme Brulee for excellent results!
